Ratnagiri Estate 50% Anaerobic Honey

Ratnagiri Estate 50% Anaerobic Honey

Ratnagiri

Ratnagiri means “Pearl Mountain”, a name inspired by the silver oak trees that form a dense canopy over the farm. Established in 1920, the farm is now owned and run by Ashok Patre, continuing a family tradition passed from his grandfather to his father and then to him.

Processing

This honey-processed lot comes from SLN 9 coffee grown at 4,450 feet in the Line Patte block of the farm. The cherries were harvested at 25.9° Brix and sorted to remove floaters. Half were then fermented in bio-fermenters for 24 hours in an anaerobic environment.

After fermentation, this portion was depulped and combined with freshly depulped cherries from the same block. The coffee was then dried slowly in a cool, dehumidified chamber over five days.
