Colombian Urbano

Grown by Ubeimar Urbano at farm La Lunita, this coffee is harvested only after meeting strict ripeness criteria. The cherries are then floated and sorted by hand to remove any defects, a labor-intensive process that requires a skilled hand, ensuring only the finest beans make it to your cup. 

After sorting, the cherries undergo 30 hours of underwater fermentation before being pulped, giving them a unique flavour profile. The parchment is then gently washed to remove any remaining pulp, and dried in controlled conditions until reaching its optimal moisture content. 

This lot is 100% Variedad Colombia, a hybridization of Caturra and Timor developed by the Colombian Coffee Federation to combat the devastating effects of leaf rust, a disease that can wipe out entire crops. Expect notes of plum, molasses and medium acidity.
