India Ratnagiri Estate Red Honey
The Hindi word 'Ratnagiri' translates to 'Pearl Mountain,' aptly named for the dense silver oak canopy that crowns this farm. Established in 1920, Ratnagiri is owned and operated by Ashok Patre, having been passed down through generations from grandfather to father to son.
Ashok describes this coffee as a red honey processed coffee that comes from two blocks on our farm and is mainly the Cauvery varietal. The coffee was depulped and allowed to have an aerobic fermentation and was slowly dried for 26 days on raised beds."
The Producer
Ashok Patre is a progressive, well-travelled, and innovative individual. Drawing inspiration from his experiences, he has transcended traditional Indian coffee cultivation and processing. He tests Brix levels before harvesting and employs various processing methods, including natural, honey, and fermentation experiments, alongside traditional washed processing.
Ratnagiri Estate is essentially an organic/biodynamic farm with official Rainforest Alliance Certification. Quarterly soil tests and organic amendments are standard practices. The farm utilizes ionic seawater and seaweed extract to boost plant immunity and fruit sugar levels.
The estate is a lush, shaded environment with three layers of canopy. It supports over 48 recorded bird species and various wildlife, including monkeys, leopards, wild boar, tigers, mongoose, and occasionally, elephants. The rich biodiversity demands a farming approach that prioritizes ecology and environmental harmony.
