Fazenda Palmital is located in Cabo Verde, in the state of Minas Gerais, Brazil, and after being acquired by Carlos Augusto's grandfather in the 1920s. The family work closely with a team of loyal professionals, who have a generational relationship with the farm and are focused on Carlos' philosophy to always do everything with the utmost level of love and attention, which results in a high quality and consistent product. Due to the altitude and characteristics of the land, the entire farm is handpicked; during the busy harvest season there 120 people working on the farm, and only 50 during the off-season.
After the coffee is dried on a patio to a level of 25% moisture content, it is then transported to mechanical driers and further reduced down to a moisture content of 11%. This is monitored through an app connected to the driers which allows careful control over the drying process, and some of the pergamino from the hulling machines is used to fuel these driers, with the aim of reusing waste products and saving energy.
