Coffee is at the heart of daily life in Chelchele—most families depend on it as their main livelihood. Harvesting is done entirely by hand, ensuring only the ripest cherries are picked, while traditional methods such as sun-drying preserve the authenticity of the process.

Generations of knowledge, combined with an unwavering commitment to quality, have positioned Chelchele as a cornerstone of Ethiopia’s specialty coffee market. For this community, coffee is not just an income, but a cultural heritage.

At the local processing site, strict quality control safeguards specialty-grade standards. The company works directly with farmers through vertical integration—providing financing, subcontracting, and paying premium prices to encourage sustainable practices.

To further elevate flavor, anaerobic fermentation is applied: ripe cherries are sealed and fermented for 10 days at a controlled temperature of 15–18°C, unlocking complex and distinctive profiles.
