India Ratnagiri Hemavathi Fermentation Natural

The Hindi word 'Ratnagiri' translates to 'Pearl Mountain,' aptly named for the dense silver oak canopy that crowns this farm. Established in 1920, Ratnagiri is owned and operated by Ashok Patre, having been passed down through generations from grandfather to father to son.

"This is a 96-hour extended carbonic maceration natural processed coffee. It is from the Hemavathi varietal grown on our farm at 4500 feet from the block called Sivermara Patte. The Brix of the coffee cherries was 25.9 when harvested and they were put in the Bio fermenters after floater removal. The coffee was inoculated with a mix of different lab-grown cultures. The tanks were then purged with carbon dioxide gas, and the coffee was fermented for 96 hours. After removing the coffee, they were directly put on raised beds for slow drying. The coffee was then dried slowly with constant stirring over the next 31 days "

The Producer

Ashok Patre is a progressive, well-travelled, and innovative individual. Drawing inspiration from his experiences, he has transcended traditional Indian coffee cultivation and processing. He tests Brix levels before harvesting and employs various processing methods, including natural, honey, and fermentation experiments, alongside traditional washed processing.

Ratnagiri Estate is essentially an organic/biodynamic farm with official Rainforest Alliance Certification. Quarterly soil tests and organic amendments are standard practices. The farm utilizes ionic seawater and seaweed extract to boost plant immunity and fruit sugar levels.

The estate is a lush, shaded environment with three layers of canopy. It supports over 48 recorded bird species and various wildlife, including monkeys, leopards, wild boar, tigers, mongoose, and occasionally, elephants. The rich biodiversity demands a farming approach that prioritizes ecology and environmental harmony. Ratnagiri Estate stands as a world-class farm, a leading example in India, showcasing the successful collaboration between Olam and the farmer to achieve excellence.

Although we have a regular order of monsoon malibar there has never been a coffee we didn't enjoy from Potter Beans. Always quick to respond they are people that obviously love what they do with a passion, whether that be coffee related or pottery related.

This coffee is very smooth and very very drinkable! Notes of milk chocolate, fig and apricot. I always thought Indonesian coffees were quite smoky and spicy but this is not. Thanks Steve for recommending it, I might have otherwise steered clear. I shall be buying another bag soon.
